Any (intended story completion but you can state other)? For me, there is a few:

FFVII - never beat the final boss (but intend to eventually, sadly my saves were lost due to manual enabling of cloud saves needed)
MediEvil 2 - same
My Time At Portia - got sick of it after ~80 h
Subnautica - I love exploring and building but story is really slow
Epic Battle Fantasy 4 - Never got around to finishing the last few fights

There are probably more, but, those are some of the games i never finished.

Witcher 3 I got up to the final boss fight. After about 20 attempts I gave up. I wasn't prepared for the spike as the rest of the game combat is quite casual. Strange I beat every boss in Elden Ring but couldn't finish Witcher 3.

Expedition 33. I got bored and distracted and then never bothered to go back and finish it.

I been gaming well over 40 years now and I have played thousands of games in this time from the arcades to home computing and I have failed to finish many of them. Some of the older games from the 80's are nearly impossible to complete due to being so hard. So really it's also impossible for me to write a list for this.

Final Fantasy 7

I had the game when they had CDs but I got stuck on the last disc as my level and power was too low to progress yet I wasn't able to level up due to unable to backtrack to easier monsters.

Normally most sims like Heart of Irons, Sim city and a few others.

This kind of games i have fun figuring out the game mechanics once that's done and the ant farm watching becomes boring i tend to quit before what some would consider a full completion.

I have the occasional game where I stopped at the final boss; most of the time it was deep in the thumb-down already so I just didn't want to bother with whatever stupid things they wanted me to do to not get overwhelmed or insta-killed by some obscure move.

far cry 3- got the whole story spoiled and quit halfway through
dying light 1- completed main game but i didnt do The Following dlc and dont know if i ever will since i also know how it ends

There are probably more, but, those are some of the games i never finished.

Currently haven't fully got all endings of Nier Automata, still half way through RE 6, at the start of Little Nightmares 2, missing to complete a few DLC heist at DSOD difficulty in Payday 2, Steamworld Dig 1 & 2 still on the first few levels, etc.

I stopped playing tales of vesperia in the final act it was just dragging too long, and I really hate the combat in all of the tales games, so I couldn't bear it any longer
