I'd just leave that setting as "Auto".
Most of the connection optimization is done at the router anyway.
The 2.4GHz band is slower, but it's a lot more stable at longer ranges (and through walls) than the 5GHz.
That's probably the most important pointer I can recommend.
I recently just upgraded from *%& cable to fiber and my bedroom is no longer a dead zone.
BUT...:
My home builder is famous for very thick walls and it was not prewired and even the fiber is not true fiber as it then goes WIFI.
Never mind that there also is furniture, giant planters, aquariums...
The next house gets set up for hardwiring!
Life tip that will save people all kinds of misery:
Get enough resources to get yourself a custom home and option it out. Be sure to figure out plumbing, electric and internet hardwiring then- not after it's built.
Plan in advance for computers, TV's, and security systems that aren't designed to work against you that really are just there to transmit to Big Brother and Monopolyzon.
Whenever possible, plan in advance to avoid the WIFI trap.
We also set up a pair of DECO meshed network routers, one at either end of the house.
The Ring hasn't disconnected once since we ditched the cable, and it connects through a brick wall in the middle of the house.
I still have some issues connecting to 5GHz in the bathroom (middle of the house, pipes in both walls) on the Fire 8, but the Fire tablets are renowned for having garbage wifi hardware anyway.
I hear you! The experience is very similar and ongoing.
They didn't say a word about networks/passwords needing re-naming and redoing, everything being need to be set up again
People like us are tech experienced. Imagine the barriers to people who aren't.
Worst case scenario is you might need to move things around so water pipes or microwave aren't in the way, or get a repeater or second router in bridge mode. Or try BPL if you're adventurous.

My bedroom is both over the garage and furthest from the AC units- and potentially far from WIFI if set centrally.
This same builder later on figured out better layouts. They always were renown for having big windows- but later models also have no light dead zones and one could almost life in the day without light bulbs.
Again, home design is going to be a real factor for all kinds of things. that most people don't realize right away.
And I get it. When I was first starting off, just getting a place was the goal.
In time, we learn that there are big differences. If we can set ourselves up well, it's gonna make a difference.
it never mattered that fiber went over wifi.....fiber still gives you the best speed without being stomped on by the guy next door with a cable run.....
If you must change anything, change the router settings.
Use Ubiquity WifiMan app to analyse wifi in your area.
Choose a clean wifi channel.
If your in close range use 5G or 6G depending on what router is capable of, you can force the standard as per the list of standard you've shown.but the risk is (if done on router) that some devices won't connect.
I have seen a definite difference since getting it.
