Doubling down when you've already been proven wrong...
Why do people do it? Why do they go down swinging even though the argument has already been definitively settled?

They might thing they're not being proven wrong. Unless you're arguing factual information, there's no way to "definitively settled" an argument.

There's people that get very defensive about having their ideas confronted because of insecurity. Or ego. A lot of times, it's both.

Then there's people that might have not understood the argument made by the other person. You can't prove me wrong if I'm missing the point you're trying to make.

Then there's people that pretend to miss the point. They understood you alright, but they're playing dumb because they never had any intention of exchanging ideas, they only cared about being percived as "in the right". This are the worst of the worst. Nothing makes me more violently angry than a person that's clearly pretending to be stupid.

Thankfully the ones in OT make themselves painfully obvious and easy to block.
If humans were rational beings like that then we would all live in Utopia by now, but since we are not then... what you get is what you get.

Ehm, I need some example?
Often people would consider argument "settled" when they bring in some facts from a "reputable source", however who can vouch these facts are true?
Or in other cases, if somebody argues against the majority's opinion, they get heckled & laughed at, but their position might actually be right and majority be wrong.

So even if you think you are 100% right and won the audience - it doesn't mean your are actually right.

Usually when someone doubles down when there's no ground to gain it's because they ran up against an immutable fact.

Short answer is PTE (Post Truth Era) defined in dictionaries in 2016 to mean "where opinion trumps fact".

Usually when someone doubles down when there's no ground to gain it's because they ran up against an immutable fact.
Or said "fact" has literally no legs to stand on.

Some people really confuse their personal views, often with limited experience, as fact. And that is unfortunately just as common than someone doubling down on their crap.

But, anyway.... Assuming the "fact' IS a fact and not just some personal opinion. Yes, people doubling down often do so because of their ego. Sometime unwillingness to learn better. This about the only reason I see.

What do you expect in a world, where the US president is openly lying and claiming things, that can easily be disproven by a 5 second Google search.

there are non-serious arguing for non-serious things, usually these argument isnt for truth and right, its about the bigger man in the room.

I say bigger man, but most times its not only about size.
and to summerize, these argument can be as complicated as rocket science, only it doesn't launch any rocket at all.

There are alot of subjects that aren't facts yet, it is protected by steam moderation. Gender ideology wasn't a fact since it was philosophy based on John Money. Even when a person may have corrected another, yet get moderated because it goes against left wing narrative which Steam community discussions is based on.

The very best way to get a fact or the whole truth is a website that isnt left leaning.
