I doubt it's beneath them to do that again, so it would be wise to find a way to internally disable Windows Update.
I am too dependent on many Windows-only programs to consider using Linux as a main OS, so I use AtlasOS for Windows 10 which I very much enjoy.
I haven't used AtlasOS before; I personally wouldn't be comfortable with using a custom build that's based off a proprietary, closed-source Windows operating system when you would ultimately be better off just ditching Microsoft completely for something (like Linux) that isn't going to hold you back from a more complete—and much more stable—user experience.
I'd recommend LibreOffice[www.libreoffice.org] for work-related documents if that's what is holding you back, as it's compatible with Microsoft formats like Excel and Publisher—it's got a very active development community around it too.
But I think I'll stick with 10 for a while longer.

There's a zillion things they do that should be against the law.
Yeah i updated to windows 11 because of that, But all 3 of my computers work quite well and not much really goes wrong, So i don't mind too much.
But if they try a subscription service I'm heading to linux.
