You need a genre, picking one video game above all is slightly ridiculous. Some would say Ocarina of Time held it for a while but Breath of the Wild/TOTK blew it out the water so now the debate is wide open.

But to start the op, for Racing games it has to be F-Zero (Gamecube).

Games with meticulous developer(s) who will do everything to make game as good as possible should be good candidates, objectively speaking.

Super MArio Bros
Sonic the Hedgehog
Minecraft - not played it but the hours and mods and feedback says it is probably the most played.
Skyrim - haters going to hate because they are spoiled brats.

If you were to tally up everyone's answers and count which game got brought up the most-

Skyrim would be my guess answer. How often do we see 'This game is better than Skyrim!'? I don't see any other game getting that kind of statement, and it's because none of those games made the same waves Skyrim did. Love it, or hate it, that game is often a center of discussion before so many others, and it is kept alive by mods.

My other guess answer would be Minecraft for similar reasons, but unlike Skyrim, it is more accessible with it's target audience being for kids, but also fun for adults, and also just being an easy game to run on a lot of hardware.

If the Mario fans could agree upon whether Super Mario Bros. 3, Super Mario World, or Super Mario 64 is the better game, then it would be one of those but we can't so Dark Souls wins[ftw.usatoday.com].
