You need to update the BIOS to v7.0 with the old CPU, then change the CPU out, it will be okay if you do not allow Windows to boot up on the old CPU with the new v7.0 BIOS because if Windows does attempt to boot, it will just freeze up.
You can access BIOS settings with the older CPU on v7.10 but do not try to load up previous BIOS settings as a few changes have been made to the settings.
I went through this very thing last year upgrading from R7 1800x to R9 5950x.
that warning is only for Bristol Ridge (9xxx and athlon 9xx) cpus only
1700x is Summit Ridge
its fine to update to the latest non beta bios, currently 7.40
bios version 7.00 supports all except Bristol Ridge
the summit cpu will work with it
