The official curator lists some games -- certainly not all.
https://unity.com/made-with-unity
Unity Technology's website has non-exhaustive lists, some of which list each month's new releases. This is useful if you know the general time when a game was released, such as the September 2025 list[unity.com]. Some games get longer case studies or interviews, which you can find linked on the website easily enough. I don't think there's a master list of all games ever made with Unity, which would be crazy long.

PCGamingWiki usually lists the engine a game uses along with other useful information. Unless they list games by game engine somewhere (possible, but I didn't see it), you'd have to look up each game individually.
https://steamdb.info/
SteamDB will also list game engines and show recent updates. This is probably your best source of information about Steam games. Not much help for games that aren't on Steam, though.
