Right click on the game title in your library, choose Properties >> Updates tab >> Remove checkmark from "Enable Steam Could synchronization".

No option there for the game I'm worried about. Does that mean that Steam Cloud isn't supported on this game?

What is the name of the game? Then people can independently tell you if that game supports Cloud sync on Steam or not.

At the very least, it has no mention of Steam Cloud on its Steam Store page. If there's no tickable box under Properties -> Updates, then there isn't Steam Cloud.

That game has no Steam Cloud support in the first place.
If a game supports Steam Cloud its shown on the store page on the feature list with this:

Automobilista 2 does not have it, so no Cloud support.
