From the game cover art in your Library or from Recent Games list if game is there, Options (right-click / press Start or equivalent button on a controller) > Developer > Clear Selected Controller Layout
If at the game details page in your Library > gear icon > Developer > Clear Selected Controller Layout
Often 'Official' is just the Gamepad template though.

I found things have changed - the option 'Developer' is hidden so have to unhide it...
1. Launch Steam with the argument -dev (this gets the setting 'Enable Developer Mode' to show up):
- Quit Steam if its running
- Right-click your Steam shortcut > Properties
- In the Target text box, at the end, enter a space then -dev
e.g.
- Launch Steam from that shortcut
2. Toggle on 'Enable Developer Mode' (this, plus having a controller connected, allows 'Developer' to show in the Options menu for a game):
- Open Big Picture mode
- Menu > Settings > System > toggle on 'Enable Developer Mode'
3. Have your controller connected if not already connected.
In BPM, right-click a game's cover in the Recent Games list or your Steam Library and you should see the option 'Developer'. If you're at a game details page, click the gear icon.
Developer > Clear Selected Controller Layout

You can go back to launching Steam normally (remove -dev from the shortcut). The setting 'Enable Developer Mode' will be hidden but its value will persist, resulting in the option 'Developer' to continue to be shown.
