I don't believe devs are required to be specific as to what is AI and what isn't. Most do anyway, because they know people will ask them anyway.
If you mean like, translation for patchnotes? I've already seen many devs willfully disclosing it on their posts, so also yes.
I opened a thread here, without mentioning the games, to get a discussion going with more neutral parties.
Also, if you find games like that, that aren't disclosing, I recommend a report via the store page.

It sounds like what the game uses falls in the second category of live generated ai content so if it's not disclosed you need to report it to steam.
