Not sure what kind of gameplay you want, 2D/3D, slow/fast actions, or what.
But give me moment, I edit this post with games to suggest, maybe they hit, or miss but I suggest watch gameplay on YouTube before buying games to help you make right choice before investing into it.

This what I can think of top of my head.
There's no way I'd be able to talk you into the RPG genre. Most of those games can be hundreds of hours long. I love them ... the longer the better.
You have to know what you like and be willing to put up with it for a very long time.
I can tell you right now I have replayed games that take over 100 hours to finish if you want everything. I even take extra time just because I feel like it. It is all about loving the game you are playing.
That's all there is to it.
That aside, you can play any game for as long as you like, there's always something to do even if the game itself doesn't present that, well maybe games like visual novels wouldn't exactly work that way, but most games do. I played over 10000 hours in Pokemon Red/Blue/Green/Yellow, 300 hours in BloodRayne 1 (I didn't have time anymore), these games also don't require any knowledge (sure I didn't have any).
33yo is the perfect age to play it
Otherwise I would also say Fallout: New Vegas it's still great to this day and run well on Steam Deck
One can just build if they want by enabling dev commands, its like a viking themed Minecraft for adults. The blood and effects from attacking mobs is fairly tame
The progress made in the game is worth it and feels rewarding. Just don't push your character too far too fast.
Games with the most longevity are still those who are either MMOS (for the social aspect) or are highly moddable and have tons of mods (for variety)
For Steam Deck I can personally recommend (as in, I’ve put in at least 90 hours-far more for many of these-on the Deck and can say they run well):
Baldur’s Gate 3
Divinity: Original Sin 2-Definitive Edition
No Man’s Sky
Any of the Elder Scrolls games (my preference is Morrowind, but you do have to jump through some hoops to get it running smoothly on the Deck).

(Warning that both of these are gachas-and both are a little bit glitchy on Steam Deck-you sometimes have to change proton versions or switch briefly to onscreen keyboard to change areas if the default Steam Deck controls aren’t behaving)
