Even in a fully released game, the only times I've ever seen update rollbacks related to mods breaking was when the update was supposed to do something regarding modding (eg an actual official modding API being implemented, or expanded on), and completely broke the ability to use mods instead.
They didn't roll back the game, they simply provided a branch of the previous version if people don't want to wait for their mods to get updated.
Version 0.63 is still the newest version and what is downloaded by default.

did you read what the devs said?
"Due to the recent 0.63 update, a lot of mods are broken. For mod users who want to rollback to version 0.62 where the mods are working, you can do so via Steam beta branch 0.62.
If your save file cannot be loaded or it says "Shelf data not loaded correctly." even after removing the mods, it means your current save is not compatible with version 0.63 anymore due to data modified by the mods. You can either rollback to version 0.62, or wait for the mods to be updated."
the update is still there
it is for those that have mods that broke
they can go back until the mods are fixed for the new version
this is awesome of the devs and nothing new in the modding world
we often have to wait for a fix from whomever made the mod

"Early access" shouldnt be a thing.
If you don't want to see Early Access games, there's a checkbox in your store settings that will take care of that for you.
If you're saying that nobody should be allowed to want to play a game while it's being developed, you're outnumbered on that particular matter.
Now we even have games in early access dishing out DLCs and that, to me, makes no sense at all. And some are even free DLCs. Why not just put whatever it is in the game... it is, in fact, not finished do why the hell make "add-ons"?
However, there are many people that will gladly buy early access games, pre-orders and will gladly buy the DLCs. So... if there are people willing to buy, I can't really fault the devs that much, as long as they are good, honest devs.
Not to mention a new trend of launching some sort of "game concept" and start rounding up "backers" in patreon or something like that. Then get them to pay 5, 10, 20 or more for 4 years (or way more) before the game ever gets released (if it gets released at all). Sorry, not for me.
I have bought a small amount of early access games on steam. One ended up being my all time favourite. The others... some are ok, some have been in EA for years and I wonder if my grandchildren will see the finished product. So I'm probably not getting into it ever again. I wouldn't get an expensive game this way... I understand the concept, understand the "need" but as with many things in life, that one good wholesome dev team that has a great vision and will do anything in their power to deliver a great, great finished game.... will be overshadowed by the many scumbags out there. Problem is, people also need to be better buyers. I personally don't really understand the concept of "pre-order". Sure, if it was something "physical" yeah, get it before it sells out. But on a digital download? For what? An extra skin and a pair of cards? In my country we have an old saying in the lines of "he who pays in advance gets bad service"...
