The devs are aware of the issue and are working on it. They don't have an M1 Mac so it's tricky for them to work on that issue.

There is a beta branch dedicated to this issue, it may resolve your issues. To use that version, right click the game in your Steam library, click "Properties", then "Betas", then choose "m1_beta", you can then close the window and it should download the beta automatically.
