Its still very clumsy and the turns are very unstable and chaotic, somehow when Im swimming backwards and turning it works better, I think that maybe using "paddles" could help but I have no idea whats that and where to put it in the vehicle...

Regarding stability, the easiest way is always size - wider, longer, lower center of gravity
that, plus some steering / stabilizing fins should do fine as a reliable platform.
If you want functional vehicles in the campaign, look for the computer terminal things that shine up a blue pillar of light. The template vehicles it gives you are generally rather well optimized, and if you dissect them you can figure out good ideas to help make sure you can do most things.
And the template speed boat is rather good. Not very flexible for putting stuff on it, but very optimized for getting around the swamps fast. I used it to get to where I needed to go before swapping to a more specialized "Do something" boat at the location. Be it mining, fighting, or passenger transport.
Something to point out is that your passenger vehicles don't need to be able to fight either. You can swap to a fighter, kill the enemies, then swap back, and the frogs will just sit around unless you take too long (I think it's a minute? Generally you can kill most encounters faster than that except for the big static ones that you generally clear out on the way to said passengers).
