As for skills, just get whatever is on the axe skill tree. The simple ones are good, like hold attack button = new move, press a certain button for a new finisher, Or the ones that enable guard + attack button to yield a special attack. Those are pretty simple.
Special mention to skills like living water, which enables dodge on ki pulse. This allows a timed dodge to activate ki pulse, which can restore significant stamina and distrupt yokai fields. It can be pretty important for ki management.
For combat,
You want your human enemies to loose most of their ki, which you can drain w strikes, hopefully empty it, and leave them weak. ( unless they are so weak, you can just destroy them right away) You do not want that happening to you. You can have some humans run to you, keep distance as they swing at air(move so they waste some of their ki), then challenge their remaining ki before they can recover. And when your combo ends, use ki pulse w timing to restore a lot of ki and challenge their ki again.
Moving around or blocking ( if you have the ki for it) is quite strong. Stamina management is really important in nioh. It leads to reduced defenses and being open to big combos if it is out. ( or rather, if you are attacked while it is out)
For monsters, you wait for them to open up, or quickly back up if you struck first, because they will retaliate and are much harder to control. Let them do their thing, strike a quick combo, then back up for defense. Let them miss and hit air. You can wait less if you are able to get behind them and make their attacks miss you, while you strike. Most yokai have impaired turning while they flail. Yokai really take time to chop down. Just be patient.
They also tend to have weak spots, like breaking a horn, or shooting an eye. These would drain massive ki and allow you to flinch them with combos( if it is completely drained) and bully yokai for quite a bit.
also, if you have ranged weapons like bows or guns, you can make short work of any foe with a head shot. As long as you have ammo. It can be quite handy.
No matter the build, it can be nice to slightly dabble into a little bit of magic or ninjitsu, just to unlock the early skills, like the healing skill( its strong even a poor magic levels) or the throw kunai/ shuriken skill. To crush ki when its almost out or interrupt ki regeneration if somthing tries to escape you. Also plenty of buffs in either tree that would be really nice for any build.
for the spirit, you can look at the spirits and see the passive stats they give you. Personally, of the early spirits I like the dog because it gives a 5% close combat dmg bonus as a passive skill. Followed by the fish, because it has a life + 100 passive. The lower buffs will only unlock if you invest some levels in spirit.
