If you're looking at the stock broker for a list of companies, note that companies will not go public immediately. They time their IPOs to maximize profits.
You can find a list of companies in the reports by clicking Industrials -> Company Directory. Starting a game in 1900, with the original game files, should have 40 starting companies, with the other 260 companies starting at various points in time. Should too many companies go out of business or get bought out, the game will dynamically generate more companies.
If your concern is a lack of competition, note it will take several years for these companies to get fully up and running.

There are 75 active companies in the save game.
You started the game with Establish AI "Estabelecer IA" Disabled. This means that the AI companies in the game start with nothing, just like you.
AI companies only make four turns per year. Their turns happen in the quarter months (3,6, 9, 12). The save game you sent me was on 2/1948, so the AI has not had a turn yet. Simulate 6-12 months, and you should see some AI activity.
If you want the AI to establish companies (have branches, cars, factories, etc) at the start of the game, you need to enable "Estabelecer IA" when setting up the game.
