The quickest fix is to change it in the settings file. If you open up the settings in a text editor you can find a joyControls section. Inside that there are "cursorVerticalInput" and "cursorHorizontalInput" entries. You want to flip the first number between the two. Such as...

There are also "cursorGrid*" entries like "cursorGridRight" that you want to change as well. You can change the cursorGrid bindings in the in-game settings.
As for a better solution, I am thinking of supporting changing the horizontal and vertical inputs for the right joystick in game so that way players that run into this can more readily change it. Please let me know if this works for you!
Thank you for this!! I finally can play after 2 hours of endless searching. Easy enough to edit the files and it's just for this game specifically so it works!! The alternate solution would be excellent but I am pleased for now!!
