I'm using Nexus Mod Manager, not the workshop, so it's easy to enable/disable/delete mods, but all your mods should be there, and I doubt removing them would delete the whole directory.
2. Go to Documents/My Games/XCOM 2/ XComGame and delete the config folder. A fresh one with default values will be made the next time the game starts.
3. Depending on how many mods you were using, you may want to verify XCOM 2 on steam.
I just did this yesterday. Worked fine. Most important step is step 2 as most mods just change ini files.
Edit: Thinking about it more, you probably don't have to unsubscribe from everything if you turn it all off on the launcher after step 2 and 3.
tl;dr
after you make changes to your mod setup, documents -> my games -> xcom2 -> xcomgame -> config -> delete everything.
This will make you reset your graphics settings though, of course. Pain in the ass.
