Why do the devs recommend 8GB of RAM for 30-year-old games?
Why would I need even half of 8GB of RAM to play these games?

Who's not have 8 GB RAM these days? I'll bet they just do a Steam survey check and make up a sysreq. These titles surely run on a decade old hardware, even if they emulated. It's not the first game I see a way above then possibly needed sysreq.

My personal issue is they still removed M+KB support for the games?

It's not for the games themselves obviously. That's just the overhead you need for the operating system to run the games now.
