That would be akin to closing out the Multiplayer functionality of MC, so you could host 1 server, It is counter-productive.
You can build sand castles all day but in the end all you can do is wipe the sand clean and start again.
So is it with SE, you can build and build and build. But there's not an actual game here.
You can try to make a challenge out of "Survival" mode but an experienced player goes from survival to thriving in a very short time. Then you are just grinding for material with which to build.
From my own experience playing on PvP servers in the long ago past there are few willing to spend 60 hours gathering and building their first warship. And fewer still, after losing all that work in the first 60 seconds of battle, are willing to repeat the effort.
TL;DR A sandbox is like a toy and while you can play games using toys a toy is not itself a game.
