So now you have a penn you could try buying them again to see if you can get them into your penn.
Failing that, there is a mod called 'Debug Mod' (or something similar) that lets you grant yourself whatever you want!!
There is the debug mod which has a feature to add animals to pens without buying them,it's a great mod actually for anyone interested in playing the game in sandbox mode to test things out
It turns out being cared for at a ranch does not affect reproduction.
Yet animals DO die out at the port. So it may be that the port population max is 0. In which case the animals do not reproduce there and will die out. But animals in a ranch will produce and reproduce normally without being serviced by herdspeople.
If you do not have ranchers, the animals will overfill ranch and continue to drop produce. Haulers will come one at a time for each product. If the ranch is maintained, the rancher will pick up all produce, being more efficient about it, but "wasting" time when there is no product to gather nor excess animals to harvest. I micromanage my ranches by staffing them when there is product on the ground or excess animals, and when there is no task, I release the ranchers to become haulers (or whatever they are called)
Similarly, orchards only benefit from staffing in harvest season. Also if any trees die then an Orchardist will only replant during spring.
Similarly, farmers can be turned off during summer and winter. But, I often forget and miss the start of planting or harvesting, so I'm not sure I do better than leaving them on :(
And, the animations of the farmers doing hoing is fun to watch. So there's that.
Only herdsman cull and collect food in pastures, not laborers. So if you need animals for regular food, they need herdsman assigned.
I have experimented with orchards, and if they are unstaffed through growth cycle their production numbers fall per harvest. Staff them again throughout and production rises, so its not tree death.
You do not need to reassign farmers each winter. Once harvest is complete, they revert to laborers until planting season returns. I have experimented here too, and prod numbers reduce if full compliment is not there through the growth period.
Orchard tree can be replanted in any season.
Farmers and all worker who can not or do not have any work to perform will become laborer. A good pool of laborers will allow these people to switch job as needed so farmers won't be very later to planting/harvesting.
Hunting, pasture (cattle/sheep), orchard, and some other work places can benefit from having laborers help. Hunting/slaughtering will produce more than one person can carry (180-200 meat, some leather). Similarly, orchard produce ~65 food (one crate) every 2 tree if worker is educated.
Pasture: only by product such as wool, and egg will be produced without herdsman. These product can be pick up by laborers.
