At shower time, make sure there are no gaurds nearby. The other prisoners will get rid of him for you.

Or just go and make him minsec prisoner and start a special wing for informants with extra guards...

Spam the punish button to send him to an eternity of solitary. That's what i do to protect my former spies from being killed.

But to actually answer your question: You can't. Once cover is blown, you can't get rid of him. He'll be attacked constantly until he's dead.

Just had the same problem in my game. I did what Trigger h@ppy suggested and made the informant minsec, then built him a seperate cell, shower, and yard off of my security room. Kind of like protective custody. The hardest part was getting him to the canteen to eat without running into any other prisoners, but if you tweak the regime it is posssible.

You can't get rid of them. That's the risk that you take when you recruit them, and especially when you overuse them. They are treated the same way as a "Snitch", and you should respond in the same way: assign them to Protective Custody.
You should definitely have a Protective Custody suite with surplus cells that is segregated spatially and temporally from the rest of the prison (I have a guide on how to set this up).
