I found the resolution. Just cook anything for now... Finish and deliver to customer and they give perfect score. the face next to the menu item means... nothing i guess for now.

I have an other question and or problem with this questline. After finishing the 10 dishes the quest asks me to build the loom, that was already existing. I could trick that, by packing and unpacking the loom again. Now it wants me to learn the blueprint for the cook's attire. But this seems to be missing. at least i could not find it. Is that something that I need to research first?

pretty sure that's in the research tree - lower portion of it I was able to craft just fine.
