A lot of the slower attacks, like the fall, you try letting it pass a bit more and parry later. But there def are some quick ones that you have to watch out for, like when he swings with his smaller spear.
for that fall, I look at the animation and check for a specific part, he is heavily leaned forward and about to crash, but not quite there, then I press. ( his fall starts slow then begins to acelerate). The fall animation is really noticable, just keep adjusting and looking for specific parts. If you pull off the guard and nothing happens, you need to wait more. If you dont get to guard and just get hit, you need to be earlier. Its more generous than you think imo. Once you see it, you can be consistent kinda fast.
also, you can break his horn ( the head or hand one) you can create a weakspot.
You do want to parry his fury attacks though. They leave him wide open for a lot of attacks.
