Mash Cook time
You have to heat water and keep the mash temp in the cooler up to 65.C yet you have to cook 11L of water more and add it after the 1hr period. THEN take your mash and boil it until it reaches a temp of 100.C The problem is keeping of the temp at 65.c does not allow for the deposit of 11L of water when you are first learning to make mash. It just won't fit. I had to actually by pass the cooking of 11L of water and go right to Boiling the mash at 100.C before transferring it to the fermenting Barrel. The recipe needs a tweek.

Take the kettle - add 21l (I usually add an extra half to 3/4 liter to allow for boil off).
Heat to 75C or 84C or whatever the recipe requires.
Pour 10L (or whatever the recipe requires) into the mash tun.
Set the remaining water to boil with the lid on.
Use a hose to connect the pot to the mash tun - open the valve (on occasion) to maintain 65C (no need to be crazy about it - I usually shoot for 66C and once it hits a little under 65C I open the valve again)
Keep doing this for the time, OR until fermented sugar no longer increases.
Take remainder of boiling water from pot - pour in mash tun (the mash out).

I've also tried skipping the mash bin entirely. Buy two steel pots and a burner. Put all your grains into one pot and then fill the other with 10L and heat to the specified temp. Then pour all the grain ingredients from the first pot into the pot with the hot water. Once it cools to 64C, turn the heat on until it hits 66C. Repeat for an hour.

In the meantime, fill the now empty pot with 11L of water and let it heat to 100C with the lid on. It takes about an hour.

The instructions are confusing and misleading. You don't actually add 11 liters after the hour is up, you just add whatever water is left in the pot. The total water you add over the hour to maintain the temperature, plus whatever is left that you pour in at the end, adds up to 11 liters.
