You could also only use corn sugar instead to make Kilju, or maple syrup to make acerglyn, or fruit wine with fruit extract, or rum with molasses. Again the game won't identify the results accurately, but you can totally use the results for jobs and stuff.
They do have a handful of wild yeast varieties. You just have to play through and make beers to unlock them. Or just try Free Play.
Predistillation rum..hmmm, without fermentation, a likely sweet and not particularly enjoyable drink. Ferment it up with a good yeast choice - still likely very sweet, high ABV for a "beer" but I'm sure I've drank worse.
Also, I've previously fermented a nearly 100% molasses brew, and it finished bone dry. Let's just say that it was a bad idea.
